Basic Pizza Dough


Ingredients for 1 dough:

3/4 cup water (110 degrees Farenheit)
1 tablespoon sugar or honey
1 teaspoon dry active yeast
12 ounces bread flour (approximately 2 cups)
Pinch of salt
2 or 3 tablespoons olive oil (any vegetable oil can be used as well)

Directions:

Mix together the water, sugar & yeast and let stand in a warm spot until water is foamy (10 to 15 minutes). Combine bread flour and salt. When making the dough for the Buffalo-style Chicken Pizza, I usually add about a 1/8 to 1/4 cup of chili powder and lots of freshly ground black pepper, too; just to make the dough a little more flavorful. For other pizzas, other spices can be added, including fresh chopped garlic, basil, chives and others. Then add the water/yeast mixture and oil while mixing to make a dough. Ball together and place in a lightly greased bowl, turning once to coat dough. Let stand in a warm spot for 1 to 2 hours to rise; a damp towel over the bowl will keep the dough from drying out too much. The dough can be rolled out and used now but for best results, punch the dough down and let rise again, or place in the refrigerator overnight.
